Elaboration in cubic concrete tanks of 10,000, 15,000 and 20,000 litres. Maceration pre-fermentation until the beginning of the alcoholic fermentation, between 14 to 18 days. The pumping over is done with air twice a day until 1020 gr/l of density, when it’s done without air. Three délestage during the maceration with density between 1070 and 1040 gr/l of the alcoholic fermentation.

To properly appreciate its full potential, a serving temperature over 13º is recommended.
Taking into account the semi-ageing of the wine, the youth, the meatiness and above all the fruity character of the wine, it harmonizes in general with blue or oily fish of a pronounced flavour and with a consistency capable of supporting the structure and body of a young wine.
