VINIFICATION

Pre-maceration at 3ºC to 4ºC during 24 hours in cold rooms. Vinified in egg shaped concrete tanks. The alcoholic fermentation and maceration is carried out at controlled temperature during 18 days and using only native yeasts.


The malolactic fermentation is done in new Alliers french oak barrels, and then is aged for 16 months.

SENSORY ANALYSIS

Opaque. Dark cherry red with purple rim. Long legs
Complex aromas and well combined bouquet. We can find fruity notes such as raspberry, blackcurrant or blackberry. Dried fruits and spices aromas, with sweet notes like vanilla, coffee and a mineral background.
Full bodied, rich and intense. Silky, smooth with balanced acidity and tannins. Long and persistent aftertaste, with oaky and toast nuances.

RECOMMENDATIONS

Serving temperature: 14ºC to 16ºC
Consumption: Optimum until 2030.
